Okay, are y’all as obsessed with Trader Joe’s Green Goddess dressing as I am?? I just love the stuff and I seriously put it on everything! It’s so fresh and flavorful. Plus it is a beautiful green color that just screams Spring!
Since it’s officially grilling season in most of the U.S. now I just knew I needed to use it as an easy marinade for some fresh, juicy shrimp and pop them on the grill! And OMG they are amazing!
This recipe couldn’t be easier: there are only 5 ingredients and it only takes 10 minutes to make (plus 30 minutes to marinate). 10 MINUTES!!
To ensure that the shrimp stay nice and juicy, you need a super hot grill and a quick cooking time. Just 2 minutes per side on the grill and they’re done! Just make sure you’ve got a nice hot grill to start with.
As far as sides go, these shrimp would be great on top of a big salad, alongside some TJ’s cauliflower gnocchi and some grilled zucchini, or maybe with just a bunch of different grilled veggies! I’m thinking grilled asparagus, eggplant, zucchini, and tomatoes! Ooo and maybe some grilled avocado slices! YUM!! 😍
Equipment needed:
- Grill
- Skewers (bamboo or metal)
- Chef’s knife
- Cutting board
- Medium-sized mixing bowl
- Small mixing bowl
- Baking sheet
- Serving platter/plate
- Grilling tongs
- Pastry brush

10-Minute Green Goddess Grilled Shrimp

Ingredients
- 1 lb shrimp peeled (leave on tails for presentation, if desired)
- 3/4 cup Trader Joe's Green Goddess Dressing
- 2 Tbsp avocado oil
- 1/2 tsp sea salt
- 1/4 cup chopped parsley
- Lemon wedges for serving optional
Instructions
- If using bamboo skewers, make sure to soak them for a few hours so they don’t burn on the grill.
- De-vein shrimp if desired (I usually don't bother)
- In a medium-sized mixing bowl, combine 1/2 cup Green Goddess Dressing, avocado oil, and sea salt. Mix until salt dissolves a bit.
- Add shrimp to the bowl and mix everything together until all shrimp are coated in the marinade.
- Cover and allow to marinate at room temp for 30 mins.
- Skewer shrimp onto skewers and place on a sheet pan.
- Pour remaining 1/4 cup Green Goddess Dressing into a small bowl. This will be used to brush on the shrimp after cooking and for dipping, if desired.
- Grill the shrimp skewers over medium/high heat (approx. 400ºF) for about 2 minutes per side or until they turn pink and opaque. This cook time is for large shrimp. Adjust cook time based on the size of your shrimp.
- Remove the shrimp skewers to a serving platter and immediately brush with a bit of the extra Green Goddess Dressing using a pastry brush.
- Sprinkle with chopped parsley and serve immediately.
