5-Ingredient Apple Sausage Breakfast Hash

This delicious apple sausage breakfast hash only has 5 ingredients, the instructions are SUPER simple (like maybe the simplest recipe I’ve ever created), and it only takes about 25 minutes to throw together! Oh, and it’s packed with flavor. I love this dish for a casual family breakfast, but it’s also special enough to serve to guests at a nice brunch!
Truth be told, this recipe was a complete accident. I threw it together when we needed a quick, filling brunch one weekend and I hadn’t planned anything for lunch that day. We had limited ingredients in the house since this was in the middle of the Covid-19 pandemic and we are trying to only go to the grocery store once every 2 weeks. And I’m pretty sure that it was actually the day before we were supposed to make our biweekly trip.
So we were low on ingredients. I had to rely on my creativity to throw something easy, delicious, and healthy together with just minimal ingredients. That’s really where the magic happens though! It’s times like that that I often make the best recipes! My creative side is forced out and fun dishes like this emerge! It’s a fun challenge and usually really rewarding!
As written, this recipe is Whole30-approved, paleo, gluten free, and has a dairy free option. It can also easily be made low carb with a couple of easy substitutions!

5-Ingredient Apple Sausage Breakfast Hash

Ingredients
- 2 Tbsp grass-fed butter ghee, or avocado oil
- 4 chicken and apple breakfast sausages 13oz/370g, sliced
- 1 lb baby potatoes diced (about 8 small baby potatoes) (*see notes for low carb option)
- 3 stalks celery sliced
- 1 medium yellow onion chopped
- 1/2 tsp sea salt
- 2 medium apples diced
Instructions
- Melt butter in a large skillet over medium heat.
- When the pan is hot, add all ingredients except apple and cook for 15 minutes or until potatoes are tender. Stir about every 1-2 minutes. Do not stir too often. You want to allow the potatoes and sausage to brown and prevent sticking.
- Add apples and cook for 2 more minutes, stirring occasionally.
- Enjoy!
