Coastal Cobb Salad with Creamy Cilantro Lemon Dressing

I like cobb salads for two main reasons. First, they are loaded with tons of different flavors and textures. Boring salads are the worst. And second, bacon. Because bacon is awesome. I’ve taken the traditional cobb salad and put my own spin on it by adding shrimp, avocado, and a creamy cilantro lemon dressing. Oh yeahhh.
This coastal cobb salad is perfect for a weeknight meal because it comes together really quickly if you cook the proteins (chicken, eggs, bacon, and shrimp) ahead of time. And even if you don’t cook them ahead of time, this recipe is still really simple. It will just take a little more time than what is listed the recipe below.
To make things easier on yourself, try cooking the bacon, then use the same pan for the chicken and then the shrimp. It makes cleanup a breeze. Then just store them in the fridge until you’re ready to assemble your salad.
Short on time and want to make your life really easy? Try buying the proteins precooked. Just make sure they don’t have any questionable additives and/or preservatives. That being said, I do recommend cooking them yourself to get the best and freshest flavors. Speaking of flavors, make sure to lightly season the chicken and shrimp with some salt and pepper before cooking.
This recipe can easily be doubled or tripled (or even quadrupled!) for a crowd. I think this salad is beautiful when served on a big tray and then dished out family style, just like a salade Niçoise.
For the salad dressing, you really don’t need any fancy equipment. Just finely chop the cilantro by hand and then mix in the other dressing ingredients for rustic dressing. For a finer dressing, throw all the ingredients into a food processor or simply blend it up with an immersion blender! I like the immersion blender method. It’s the easiest and has the least amount of cleanup.

Ingredients
Creamy Cilantro Lemon Dressing
- 1/4 cup paleo mayonnaise
- 3 Tbsp minced cilantro
- 1 Tbsp water
- 2 tsp fresh lemon juice
- Zest of 1 lemon
- 1/4 tsp garlic powder
- 1/2 tsp sea salt
Coastal Cobb Salad
- 6 cups chopped romaine lettuce
- 6 oz cooked shrimp
- 4 oz cooked chicken breast sliced
- 2 boiled eggs halved
- 1/4 cup crumbled cooked bacon
- 1 avocado chopped
- 1 cup grape or cherry tomatoes halved
- 1/2 cup chopped cilantro
- 1 green onion sliced
Instructions
Creamy Cilantro Lemon Dressing
- Mix all ingredients together by hand or blend using an immersion blender or food processor. I recommend using an immersion blender.
- Store under refrigeration until needed.
Coastal Cobb Salad
- Assemble salad on a large platter. Line the platter with romaine lettuce and then arrange the toppings.
- Serve with creamy cilantro lemon dressing.

On the pinterest pin where you list the ingredients (not the recipe) it says. 11 T coriander. At first I thought it was a typo but then I couldn’t even find coriander in the recipe. Would hate for someone to buy coriander only to find out it isn’t needed
Hi, Linda! Oh no! Thanks so much for letting me know. Unfortunately, I can’t control what the Pinterest pin pulls from my recipe and decides to show with the pin. I do know that some other countries (like the UK) call fresh cilantro “coriander”, so my guess is that’s where that comes from. But it’s 3 Tbsp and not 11 Tbsp. Yikes! I hope that’s not confusing for anyone. I’ll have to look into if there is something I can do to change that. Thanks again for letting me know! I hope you enjoy the recipe! 🙂
Hi I’m trying to figure out the macros for this but need to know if this is 2 or 3 servings?
Hi Kayla! For me it would be 3 or even 4 servings, but for someone larger (like my husband) it would be 2 servings. That’s why I say 2-3 servings. Hope this helps!
I’m afraid I have to ask an embarrassing question. How do you eat this salad? Does each person take a bit and then mix it? Thank you. This dressing sounds yummy.
Hi, Carol! Oh it’s not embarrassing at all! Good question! It’s really up to you! You can make one large salad that each person serves themselves OR you can plate the salads for everyone prior to serving. Seriously though, it looks delicious, and the pictures are beautiful, I’m making it for dinner tonight, but it helps no one to say “after you’ve prepared and cooked four different proteins and washed and chopped five kinds of vegetables, it only takes five minutes.” It just makes the times meaningless. It would be helpful to know approximately how much time to expect to put into a dish (or just how much time you put in), even if it can all be done ahead. Or just call it a dressing recipe and make suggestions for a great salad you could put it on.
Hi Ally! I’m glad you like the recipe and pictures! I hope that the salad turned out well when you made it. I’m sorry you didn’t care for the way the recipe was written. When writing this recipe, I struggled with the decision of whether or not to include how to prepare all the proteins into the recipe. I decided to include cooked proteins because the way I make this salad is usually with leftover chicken or shrimp and I know that a lot of my readers would also be preparing the salad with already cooked proteins for convenience-sake or to use up leftovers. I’m so sorry that the prep time and cook time were misleading. When cooking everything fresh, chopping all the veggies, and making the dressing this salad is quite labor-intensive and could take up to an hour I would think.
This recipe was delicious. Prep-wise, it took a little over two hours to get everything prepped, with help from my husband and kids. 🙂 I did double the recipe so that it would serve 6 and I am sure that took some extra time too. We would eat it again though, if we had some of the proteins together from earlier in the week. That would make a huge difference. BTW, your picture was beautiful. I have discovered that if I show my kids a pic of what they will be eating, they are much more likely to buy into it! One if my kids was a little disappointed his did not look exactly like your picture. Lol!
