This cucumber dill salad is so simple to make and the perfect side dish for your next summer bbq. It’s also a great side dish for a quick weeknight meal! I love how light and refreshing it is, especially when paired with grilled meats and seafood. And it only takes 8 minutes to make. To make your life even easier, just make it a day ahead of time! It actually gets better the longer it sits to marinate. Nothing better than a party side that you can throw together the day before and forget about. I mean, you need to enjoy the party too! 😉
While cucumber salad isn’t necessarily anything groundbreaking as far as summer side dishes go, mine is a little healthier because it doesn’t include any refined sugar. I’ve traded the traditional white vinegar and refined cane sugar for white wine vinegar and honey. You still get that nice sweet, salty, and tangy taste, but without the sugar rush. White wine vinegar is naturally sweet from the grapes used to make it, so while it still technically has sugar in it, it’s from a natural source. The sugar content from the grapes and honey has a lower glycemic index, so while it tastes just as sweet, it has less of an effect on your blood sugar. Plus, honey and white wine vinegar just taste so much better!
I will note that my cucumber salad recipe is a little less sweet than a traditional cucumber salad. I just like it that way. I mean, it is a salad, not a dessert. I’d rather to save my calories for a serving of paleo blueberry cobbler. Just sayin’. If you really want a sweet cucumber salad, just add a bit more honey until it’s sweet enough for your liking.
This recipe is definitely low carb. It only has 1/2 tsp honey in it and the amount of sugar in the white wine vinegar is pretty negligible. So, unless you are drinking the liquid from the bowl, this recipe is low carb. Now, if you are looking for a strictly keto option, try replacing the honey with liquid stevia drops. I have done this before and the results are actually pretty good! Just don’t add too much or it will taste a little funky. Yes, I have done that too. Feel free to experiment with other low carb sweeteners as well!

Cucumber Dill Salad

Ingredients
- 3 medium cucumbers ~700g
- 1/3 cup chopped fresh dill
- 1/2 medium red onion thinly sliced
- 1/4 cup white wine vinegar
- 1/2 tsp honey
- 1 1/4 tsp sea salt
- 1/4 tsp freshly ground black pepper
Instructions
- Thinly slice cucumbers by hand or with a mandoline.
- Place cucumber slices, red onion slices, and dill in a large bowl.
- In a small bowl, mix together vinegar, honey, sea salt, and pepper.
- Pour liquid over vegetables and toss until evenly coated.
- Cover and refrigerate for at least 1 hour before serving.
