I love a good piña colada. Coconut and pineapple are truly a match made in heaven. If I could drink piña coladas everyday without any consequences I probably would. Buuuuut since that’s probably not in my best interest I’ve gotta get my pineapple coconut fix another way. Enter the green piña colada smoothie.
OMG. Perfection.
It’s got all of those amazing flavors (well, except the rum) but it’s actually healthy! This recipe is packed with spinach, has no added sugar, and has a good serving of healthy fats from the coconut milk.
I’m always trying to find creative ways to add gelatin and collagen to my diet since it’s great for your skin and joints. But that’s not always an easy feat because I have a pretty sensitive palate, so I can detect the taste in anything. It’s not a bad flavor, just distinct. So, I like to disguise it however I can. I find that the sweet/tart combo is great for hiding the flavor. Accordingly, I love to add it collagen to my smoothies, especially this one!
Not only is collagen great for your skin, but it’s also a great source of protein at about 5g per Tbsp. I like to add 1 or 2 Tbsp collagen to this smoothie. If you are really sensitive to the taste though you’ll probably want to stick with just 1 Tbsp. Of course, the collagen is totally optional here if you don’t have it or don’t want to use it. Or if you want to make this smoothie vegan.

Green Piña Colada Smoothie

Ingredients
- 3 cups loosely packed 120g baby spinach
- 2 cups 250g frozen pineapple pieces
- 1 cup coconut water
- 1/2 cup full fat coconut milk
- 1 cup ice
- 1-2 Tbsp collagen optional
- Liquid stevia to taste ~20 drops of SweetLeaf brand
- *omit stevia for Whole30
Instructions
- Add all ingredients except collagen to a blender.
- Blend on high until smooth.
- If adding collagen, reduce speed to low and sprinkle it on top. Blend just until fully incorporated because blending too much can damage the collagen.

As a retired esthetician would like to share with you that unless collagen is produced from your body in order to bring suppleness and plump your skin it must be produced from within your body. You might want to consider taking phytoceramide vitamins to help keep your skin smooth or seeing a dermatologist to advise you what to do.

I made mine with fresh pineapple, so I eliminated the coconut water, added extra cup of ice and 1/4 cup extra coconut milk. Also, 1 Tbsp chia seeds. Delicious! I didn’t add any sweetener. It didn’t need it. Thanks for the recipe!

Have you tried it with collard greens?
Hi, Kristine! No, I haven’t. You could try it, but I think the flavor of the collard greens would be too strong for this recipe. Same goes for kale. I use spinach in this recipe because it has a very mild flavor.
