Healthy Smash Cake Recipe (egg-free)

This healthy smash cake recipe is super easy to make and only made with healthy, real food ingredients. This cake is egg-free and can also be made gluten free and/or dairy free and vegan!

This Healthy Smash Cake is so easy to make!

This little healthy smash cake recipe is perfect for your little one’s first birthday cake smash! I made this cake for our little guy Henry’s first birthday just a couple months ago and he loved it!

As a mom I also loved it because it was low in sugar (only sweetened with applesauce and a touch of maple syrup!) and doesn’t have any weird ingredients or food dyes.

Totally my opinion here, but there is absolutely no reason for a baby to be eating a conventional cake full of sugar, heavily processed ingredients, and food coloring. I just can’t imagine giving that to my sweet baby!

That being said, I certainly mean no offense to anyone who decides to do a traditional cake for their little one’s smash cake. To each their own.

However, I do want to draw attention to the fact that traditional cakes are not the only option! This healthy smash cake is as healthy as a muffin, but still has a light, fluffy texture like a traditional cake or cupcake.

Egg Free Smash Cake Recipe

Not only is this smash cake healthy, but it’s also egg-free! Our little guy Henry is allergic to eggs, so I needed to make something without eggs. This smash cake is every bit as fluffy delicious as one made with eggs though!

You’ll notice the batter is pretty thick, unlike traditional cake batter. This thick batter (and the ratio of baking powder to flour) really helps this cake rise and ensures a fluffy texture.

Made in a muffin pan!

This healthy smash cake can be made in a standard muffin pan or a jumbo muffin pan. With a standard muffin pan this will make one big cake and a little tester for you to try! With a jumbo muffin pan this will just make one.

If you want to make this in a small springform pan (something around 6″), just double the recipe and bake for about 30 minutes. I haven’t tested it that way, but I believe it should work! Just test for doneness with a toothpick in the center. Make sure to line your springform pan on the bottom and sides with parchment paper and cool on a cooling rack.

The easiest smash cake frosting ever

This frosting seriously couldn’t be easier. It’s made with 4 ingredients and you just mix it all together in a bowl with a spatula! So simple!

If you want to make it fluffier, feel free to whip it up in your stand mixer or with a hand mixer. This is totally not necessary, but if you have a few extra minutes and don’t mind the extra clean up, then I highly recommend it!

Ingredients to make this recipe

Vanilla Smash Cake:

  • 1/2 cup organic all-purpose flour (sub this gf flour for gluten free)
  • 1 tsp aluminum-free double-acting baking powder
  • 2 pinches fine sea salt
  • 2 Tbsp grass-fed butter, melted (sub this oil for dairy free/vegan)
  • 1/4 cup unsweetened organic applesauce
  • 1/2 tsp pure vanilla extract

Easy Vanilla Frosting:

  • 2 oz organic cream cheese
  • 1 Tbsp organic plain yogurt
  • 2 tsp organic pure maple syrup
  • 1/2 tsp pure vanilla extract

How to make this healthy smash cake recipe

Vanilla Smash Cake:

STEP 1

Preheat oven to 350ºF (177ºC). Grease and flour 2 of the spots in a standard muffin pan or 1 spot in a jumbo muffin pan.

STEP 2

Mix dry ingredients together in a medium mixing bowl until well-combined.

STEP 3

Add in wet ingredients and stir until just combined.

STEP 4

Pour into greased and floured muffin pan. If using a standard muffin pan, overfill one of the spots (that will be the smash cake) and then use the leftover batter for the other spot (just a tester for when it comes out of the oven). You can see how I did it in the photos above! If using a jumbo muffin pan, just fill one of the spots with the batter. See notes above for silicone pan option and mini cake option.

STEP 5

Bake on center rack for 20-25 minutes.

STEP 6

Cool in pan for 5 minutes, then remove to cooling rack to finish cooling.

Easy Vanilla Frosting:

STEP 1

Mix all frosting ingredients together in a medium mixing bowl with a spoon or spatula.

STEP 2

Alternately, you can whip it up using a hand mixer or stand mixer if you want it fluffier and don’t mind the extra step.

STEP 3

When cake is completely cooled, spread the frosting all over it and serve! You can frost it and then stick it in the fridge too until ready to serve 🙂

Gluten Free Smash Cake Version

We generally eat mostly gluten free for longevity and to reduce overall bodily inflammation, but we do enjoy regular wheat recipes sometimes. For a gluten free version, simply replace the all-purpose flour with a gluten free 1:1 flour blend like this one.

I actually haven’t tried a gluten free version of this cake myself yet, but based on my past gluten free baking experience I think this blend should work the best in this recipe! I’ll make sure to report back when I try it!

Dairy Free Smash Cake Version

This cake can also easily be made dairy free and vegan by using coconut oil or this fun new butter substitute I found!

I’m not one to usually recommend butter substitutes, but I’ve done my research and I’m actually really impressed with the ingredients in this one!

To make the frosting dairy free and vegan, make sure to use a vegan cream cheese and a vegan yogurt.

How to store this smash cake

If you finish making this smash cake well ahead of serving time, make sure to store it in the fridge since the frosting is made with perishable ingredients.

Store any leftovers under refrigeration in a sealed container.

    Notes

    You can also make this recipe in a silicone muffin pan, but you may need to add a few more minutes to the cooking time. Check for doneness at 20 minutes with a toothpick and continue to bake in 5 minute increments until it's done.
    For a mini cake in a springform pan (approx 6"), you'll want to double the recipe and bake for about 30 minutes.
