Keto Fruit Salad is perfect for summer!
This Keto Fruit Salad is the perfect option for those wanting to enjoy a fresh fruit salad but trying to stay low carb! The fruits in this salad are all low carb and I’ve included cucumber, coconut, and mint for some amazing flavor! Top it all off with a delicious fresh lime dressing and you’ve got the perfect treat for spring, summer, or really any season.
The star of the show, pun intended, is the star fruit! Such a fun tropical fruit and totally underrated, in my opinion. It has such a fresh flavor and is very low in sugar, making it perfect for a keto fruit salad! And they are just so darn cute when cut!

I got these cute little star fruits at Sprouts Farmers Market! Sprouts has a great selection of fresh tropical fruits and I love that I can always find something new to try. My other favorite tropical fruit that they carry is dragonfruit! It’s actually pretty low carb as well. I’d describe it as a less sweet version of kiwi. Perfect for snacking or adding to smoothie bowls.
How to make Keto Fruit Salad
I just love how simple this recipe is. You can make it in under 10 minutes total and it’s almost too simple to even call a recipe! I’ve included measurements for all of the fruits but, of course, you can definitely customize the amounts to suit your taste.
This recipe is paleo, gluten free, keto, vegan, and can be made Whole30 by omitting the stevia. And feel free to omit the stevia if you just want to use fresh lime juice for the dressing! Totally up to you! I do love the subtle sweetness you get from the stevia though, so I definitely recommend it.
Recipe notes for Keto Fruit Salad
On the topic of stevia, it’s important to note that the sweetness of liquid stevia varies from brand to brand. There’s no set sweetness level. For this recipe I use SweetLeaf Sweet Drops and it’s one of the sweeter ones that I have tried. The recipe calls for 1/4 tsp stevia, so if you’re using a different brand I would start with that amount and then increase as needed. But like I said above, it’s really just for a subtle sweetness, so you don’t want to go overboard with it.

Ingredients
- 3 starfruit sliced and seeds removed
- 1 medium English cucumber diced
- 1 1/2 cup blueberries
- 1 cup raspberries
- 1 cup mint leaves loosely packed
- 1/2 cup flaked unsweetened coconut
- 1/4 cup fresh lime juice juice of about 3 limes
- 1/4 tsp liquid stevia* omit for Whole30
- 2 pinches fine sea salt
Instructions
- Add 3 sliced starfruit, 1 medium diced cucumber, 1 1/2 cups blueberries, 1 cup raspberries, 1 cup mint leaves, and 1/2 cup coconut flakes to a large bowl.
- In small mixing bowl, combine 1/4 cup lime juice, 1/4 tsp liquid stevia, and 2 pinches sea salt. Whisk until salt dissolves.
- Pour lime dressing over the fruit salad and gently toss to coat.
- Serve immediately or refrigerate until ready to serve. If waiting to serve, reserve raspberries and add just before serving.
