How cute are these?! You know I had to make a 4th of July recipe for y’all! I’m in Florida right now and it’s literally like 95 degrees everyday, so cool treats and ice in every beverage are a must! Okay, unless it’s a glass of rosé 😉

These sweet little pops are not only delicious and cute, but also low in calories, full of fresh fruit, and suitable for a variety of diets! They are paleo, dairy free, gluten free, vegan, low carb, and Whole30 approved! Woohoo!

It only takes about 5 to 10 minutes to throw these popsicles together, depending on if you’re cutting the strawberries into star shapes or not. Although that really doesn’t take too much time either if you’re using tiny star-shaped cookie cutters!

This recipe makes 6 popsicles in molds that hold about 3oz (88mL) of liquid. I used these. These popsicle molds are great because they are a neutral white color, which I love, and are also BPA free! But I won’t judge if you make these in dixie cups with popsicle sticks 🙃. They will still be super cute!

    These fun, colorful popsicles are so fresh and tasty! The perfect refreshing treat for the 4th of July! Or any hot day! Made with only real food ingredients, you can feel good about giving your kids these tasty treats! These popsicles are paleo, dairy free, gluten free, vegan, Whole30 approved, and low carb! 
    Prep Time: 10 minutes
    Cook Time: 4 hours
    Servings: 6 popsicles

    Ingredients 

    • 2 cups 473mL pure coconut water
    • 5-10 drops all natural blue food coloring** optional
    • 1 tsp maple syrup or honey optional, *see notes below for low carb option*, omit for Whole30
    • 1 cup 145g organic blueberries
    • 6-8 large organic strawberries cut into star shape if desired***
    • 1/2 cup 60g cubed fresh coconut meat

    Instructions

    • Combine coconut water, natural blue coloring, and sweetener of choice (if using) in a glass measuring cup.
    • Distribute fruit among the popsicle molds. If you have cut the strawberries into stars and want those to be visible, make sure to lay them along the "front" of your popsicle and wedge them into place with other fruit. 
    • Place on finger on top of the fruit to keep it in place, then pour coconut water to the fill line. Insert the popsicle stick top, secure in place, then repeat with remaining popsicles. 
    • Place in freezer for about 4 hours or until frozen solid. 
    • When ready to eat, place each popsicle under hot running water for about 10 seconds to help loosen the mold. Enjoy!

    Notes

    *For a low carb version, omit the sweetener altogether (they are still amazing without any extra sweetener!) or use something like Lakanto maple flavored syrup or Sweet Drops liquid stevia.
    **I used the Whole Foods 365 brand of food coloring, available at Whole Foods Market, but these would also work if you don't have a Whole Foods nearby. The amount of blue food coloring will vary depending on the brand you choose and how blue you want the popsicles to be. 
    ***I used these star shaped cookie/fondant cutters! So cute!
