Dragon fruit, also known as pitaya, is one of my favorite fruits because of its light, fresh taste and its beautiful magenta color. When used to make ice cream or smoothies, the color is just gorgeous! Dragon fruit has the texture of a pear and tastes a bit like kiwi. Some dragon fruit varieties have white flesh instead of pink/magenta, but the taste and texture are similar.

This strawberry dragon fruit ice cream is light, refreshing, and tasty (of course!). I like the combination of strawberries with dragon fruit because they compliment one another so well. Strawberries also add a little more sweetness to this ice cream since dragon fruit is not very sweet. Add a cute pink cherry and serve in a martini glass for a cute presentation at your next party! I found naturally colored pink cherries at my local Whole Foods market.

Dragon fruit comes with a multitude of health benefits. The fruit is high in antioxidants, B vitamins, vitamin C, fiber, fatty acids, phosphorus, and lycopene, to name a few. This fruit is also relatively low in fructose when compared to other fruits, which is great for those who want to watch their sugar intake. Perfect for guilt-free ice cream! 😀

    Ingredients 

    • 210 grams ~1.5 cups frozen strawberries
    • 150 grams ~1 cup frozen dragon fruit pieces
    • 1/4 cup full fat coconut milk
    • 10 drops liquid stevia optional

    Instructions

    • Blend all ingredients together in a high-powered blender using a tamper to push the fruit into the blades.
    • Alternately, you can use a food processor, scraping down the sides as you blend.
    • Blend until smooth.
    • Add more coconut milk as needed to get the consistency that you want.
