Green juices are the perfect way to get your veggies in when you don’t particularly feel like eating a big salad or when you need to take your veggies on the go! Personally, I love the taste of most green juices, but some people think they taste like grass. If you are one of those people, prepare yourself for a change of heart. This green juice is anything but grassy. It’s packed with tropical fruits and mild baby spinach for a light and refreshing fruity taste that will take you straight to a hammock on a beach somewhere. Ahhhhh…
The best part is you don’t need a juicer to make it! Just a high-powered blender like the Vitamix or Blendtec. Those of you who know me know how much I love my Vitamix. It’s just the best. Can’t live without it. Even when we move overseas, it goes with me in a suitcase instead of with the rest of our household stuff. Sounds crazy, but I’d rather lug it around then go a few months without it. It’s that great.
This recipe is so easy and delicious. Just add all the ingredients to your blender and blend away! For a little extra sweetness, I like to add liquid stevia to the mix. This addition is completely optional, but it really brings out all the flavors and makes it taste like a treat! I highly recommend it. My favorite liquid stevia brand is Sweet Drops by SweetLeaf. This stevia tastes great, doesn’t contain any bad ingredients, and comes with a handy dropper for ease of use.
For this recipe, I’d recommend using frozen pineapple and mango because it helps keep the juice cool while blending. I like my juices to be nice and cold. Alternately, you can use fresh fruit and pour the juice over ice to serve. Or just blend up some ice with the juice. Also, feel free to use pre-frozen fruit from the store or freeze your own fresh fruit!

Ingredients
- 2 cups packed 130g baby spinach
- 1 cup 200g frozen pineapple pieces
- 1/2 cup 100g frozen mango pieces
- 1/2 banana ~60g
- 1/2 lemon juiced
- 2 cups cold water
- 20 drops liquid stevia optional, but recommended
Instructions
- Place all ingredients in a high-powered blender.
- Start blending on low and slowly work up to high, using a tamper or mixing as needed.
- Blend on high for 1 minute.
- Enjoy!
