peeled & headless (~10 med/large shrimp)
salt & pepper

freshly squeezed lemon juice

extra virgin olive oil
Instructions
Spiralize your zucchini.
Arrange the noodles on a plate.
Dry the shrimp well and season both sides with salt and pepper.
Melt ghee in a skillet over high heat.
When pan is hot, add the shrimp.
Cook shrimp for 30-45 seconds each side (just until pink). Be careful not to overcook them or they will be rubbery!
Remove shrimp to a plate to cool.
Add cooled shrimp, tomatoes, and basil to the zoodle salad.
Drizzle with lemon juice and olive oil.
Add extra salt & pepper to taste if desired.
