extra virgin olive oil

organic grass-fed butter or ghee

medium yellow onion
diced

cloves
garlic
minced or pressed

chopped fresh clams in juices
1/2
cup
dry rosé wine
1/3
cup
chopped fresh parsley
1/2
tsp
sea salt
1/8

freshly ground black pepper

organic cornstarch or arrowroot powder + 1 Tbsp water
Instructions
Cook pasta.
Make sauce while pasta is cooking -- Heat oil and butter over medium heat in a large skillet.
Add onion and sauté for 5 minutes or until onions are soft.
Add garlic and sauté for 1 minute.
Add clams and juices, rosé, parsley, salt, and pepper.
Increase heat a bit and bring to a simmer.
Reduce heat to medium-low and simmer for 10 minutes, stirring occasionally.
Add starch and water mixture to thicken the sauce. Mix well.
Serve over warm pasta.
