This healthy smash cake recipe is super easy to make and only made with healthy, real food ingredients. This cake is egg-free and can also be made gluten free and/or dairy free and vegan!

Ingredients
Vanilla Smash Cake:
1/2cuporganic all-purpose floursub this gf flour for gluten free
Mix dry ingredients together in a medium mixing bowl until well-combined.
Add in wet ingredients and stir until just combined.
Pour into greased and floured muffin pan. If using a standard muffin pan, overfill one of the spots (that will be the smash cake) and then use the leftover batter for the other spot (just a tester for when it comes out of the oven). You can see how I did it in the photos above! If using a jumbo muffin pan, just fill one of the spots with the batter. See notes above for silicone pan option and mini cake option.
Bake on center rack for 20-25 minutes.
Cool in pan for 5 minutes, then remove to cooling rack to finish cooling.
Easy Vanilla Frosting:
Mix all frosting ingredients together in a medium mixing bowl with a spoon or spatula.
Alternately, you can whip it up using a hand mixer or stand mixer if you want it fluffier and don't mind the extra step. I didn't bother and just mixed it by hand!
When cake is completely cooled, spread the frosting all over it and serve! You can frost it and then stick it in the fridge too until ready to serve :)

Notes
You can also make this recipe in a silicone muffin pan, but you may need to add a few more minutes to the cooking time. Check for doneness at 20 minutes with a toothpick and continue to bake in 5 minute increments until it's done.For a mini cake in a springform pan (approx 6"), you'll want to double the recipe and bake for about 30 minutes.
