This simple Honey Garlic Crock Pot Pork Loin recipe is easy to make and great for the whole family!

One thing I absolutely love about this recipe is how simple it is to make. It’s one of those easy meals that you’ll keep making over and over. And for a novice cook, it is honestly the best way to make a pork loin.

And I know you might be tempted to skip the searing step in the beginning to simplify things even further, but I promise you it is essential for this slow cooker pork recipe! It gives the best flavor and really seals in the natural juices, making the end result the most flavorful, juicy pork loin roast you’ve ever had. Many pork recipes can come out dry, but this one is super juicy. Just perfection!

Another thing I love is that it’s perfect for the whole family! My kids love it for dinner and also for sandwiches throughout the week. We just recently started cooking pork loin this way, but I guarantee it will become a family favorite as the years go by.

That Honey Garlic Glaze! SO GOOD!!

One of my favorite ways to use the leftovers in a sandwich with some nice bread, mayonnaise, romaine lettuce, heirloom tomato slices, and Maldon salt flakes. You’ll be in absolute heaven! If you’ve got any of the glaze left, don’t forget to throw that on the sandwich too! YUM!!!

Can we just have a moment for the glaze though?? It’s seriously divine. Arguably the best part of the dish. Sweet, salty, garlicky, and the perfect accompaniment for this juicy slow cooker pork loin roast. You’re going to love it!!

Ingredients needed to make this simple crock pot pork loin recipe

  • 2 to 3lb boneless pork loin
  • 1 ½ Tbsp fine sea salt
  • 1 ½ tsp freshly ground black pepper
  • 4 Tbsp grass-fed butter, divided
  • ½ cup chicken broth
  • ½ cup dry white wine
  • ½ cup honey
  • 1 large yellow onion, sliced
  • 10 cloves garlic, chopped
  • 5 sprigs fresh thyme

How to make this simple crock pot pork loin recipe

1. Season pork loin. Pat roast dry with a paper towel and season with salt and pepper evenly on all sides. Do not trim excess fat since this is a very lean cut of meat.

2. Sear all sides. Melt 2 Tbsp butter in a large skillet over medium-high heat. Sear all sides to brown (about 10 minutes total). Remove roast to plate and deglaze pan with broth and wine. Scrape the bottom to loosen the browned bits. Turn off heat and whisk in honey.

3. Place in slow cooker. Add sliced onions on the bottom of the slow cooker, place pork loin on top of onions, pour sauce over the top, and top with garlic, remaining 2 Tbsp butter (cut into about 8 pieces), and thyme sprigs. Place probe of meat thermometer in the center. I recommend using a meat thermometer to get perfectly juicy pork tenderloin!

4. Cook. Secure the lid and set to the low setting for 4-5 hours or the high setting for 2-3 hours (3-4 hours cook time on high for a larger cut of meat over 3lb). The pork loin is done when the internal temperature reaches 140ºF (60ºC). While the pork cooks (at the end of the cooking time), you can prepare your side dishes.

5. Rest. Carefully remove to a cutting board, tent loosely with foil, and rest for about 15 minutes. After the cooking process, the internal temperature will continue to rise to the perfect final serving temperature of 145ºF (63ºC).

6. Make sauce. While the pork rests, make the sauce by straining the liquid and pouring it into a saucepan. Simmer over medium until it reduces to a glaze. You should have about 2 cups of liquid and it will reduce to about 1/2 cup at the end. Alternately, you can mix in a few teaspoons of arrowroot powder or cornstarch to make a cornstarch slurry and mix with the juices then bring to a simmer to make a gravy.

7. Slice and Serve. Serve with roasted baby potatoes and green beans for the perfect cozy meal! Serve the glaze in a gravy boat with a pour spout or in a small bowl with a serving spoon. If the glaze gets too thick as it cools, you can always re-warm it gently in a hot water bath over medium heat (or in the microwave).

8. Storage – Store any leftover pork loin slices in an airtight container in the refrigerator for up to 4 days or in the freezer for up to 6 months. For the freezer method, it’s best to vacuum-seal it to prevent frost.

Helpful hints when making this simple crock pot pork loin recipe

  1. Don’t skip the sear! Just don’t do it. It’s the difference between an okay recipe and a great recipe.
  2. To save time when making this slow cooker recipe, prep the remaining ingredients while the pork loin is searing (i.e. slice onions, chop garlic, etc.).
  3. At the grocery store there will be many different cuts of meat for pork. Make sure you buy a pork loin roast for this recipe. That’s different from a pork tenderloin or pork shoulder roast.
  4. Make sure to choose high quality meat for your crockpot pork roast. I use sustainably- and responsibly-raised animals from organic, local farming practices, whenever possible. High quality meat = extra flavor, more nutrients, and fewer toxins! Better tasting and better for your health 🙂 If you can’t find high quality pork in your local grocery store, try going to a local butcher shop or farmers market! They usually have great options.
  5. If your roast isn’t tied up when you purchase it, you may want to truss it to give it that nice log shape before cooking. That gives you nice, pretty slices for serving! You can absolutely cook the roast without trussing it though.

What to serve with crock pot pork loin

For a complete meal, I love to serve this simple crock pot pork loin roast with roasted baby potatoes or red potatoes and green beans. It’s also great with other veggies like asparagus and brussels sprouts. Sweet potatoes or wild rice are also great options for the perfect meal!

This easy slow cooker pork roast recipe is also perfect for meal prep! Just pair your cooked pork loin roast slices with your favorite sides and you’ve got meals for days! And since you have a longer period of time while the meat cooks, you will have tons of time to make your meal prep sides.

Why use a slow cooker / Crockpot for cooking a pork loin?

The slow cooking method will ensure a juicy, perfect roast every time! That’s truly the beauty of slow cooker meals.

For even further insurance that you will have the perfect roast, I highly recommend investing in a simple meat thermometer. I use this meat thermometer in my cooking almost daily. From stovetop chicken breasts to smoked meats, it’s a super useful little kitchen tool that you will get tons of mileage out of.

I’ve had my same meat thermometer for years and it’s still going strong! Plus, you can’t beat the price!

Using a Crock Pot is a also a great way to cook pork loin if you’re more of a novice cook. It takes less time and there are fewer steps than traditional roasting.

What brand of slow cooker do you recommend?

I use a basic Crockpot 7-quart manual slow cooker and it’s worked great for the past 10 years! I’m fairly convinced that it’s going to last forever at this point.

I actually love the simplicity of the manual dial. The great thing is that you can just set and go. The slow cookers with the digital displays don’t tend to last for decades like the manual ones do. Just my two cents!

Can I use a pork tenderloin or pork butt?

No, sorry. Pork tenderloin is way too lean for this recipe. I recommend checking out my simple recipe for Maple Bourbon Pork Tenderloin. It’s an amazing pork tenderloin recipe!! Such an easy recipe for the holidays or really any time!

And a pork butt will be too fatty for this recipe. Better to use the pork butt to make shredded pork than try to slice it like a roast.

Can I use my Instant Pot for this simple Crock Pot pork loin recipe?

Yes, you can! If you want an even shorter cook time, you can absolutely use an Instant Pot. The cook time should be around 45 minutes on high pressure. And you can sear the meat right in the Instant Pot, which is nice for clean up.

The one caveat here is that there is no way to monitor the internal temperature of the meat as it cooks. You can’t seal the Instant Pot with the probe wire sticking out. It just doesn’t work. So it will be more of a guessing game and you could overcook the meat.

What about for pork tenderloin?

I have made an Instant Pot pork tenderloin before though and it turned out great! The first time I made it I undercooked it. But that was an easy fix as I could just replace the lid and cook for an additional few minutes! The next time I got it just right and it was actually so yummy!

Other ingredient variations to try out!

  • Soy sauce or tamari in the broth for extra umami
  • Balsamic vinegar
  • Worcestershire sauce
  • Spice rub
  • Hot sauce
  • Brown sugar or coconut sugar (or even maple sugar – my favorite!!)
  • Olive oil instead of butter
  • Garlic powder or onion powder – add for additional flavor in the glaze if needed
  • Italian seasoning – I’ve seen this in other recipes, but prefer the taste of fresh thyme alone in this recipe
  • BBQ sauce – perfect for leftover bbq sandwiches!
