Piña Colada Mimosas

There’s nothing basic about this brunch cocktail. I mean, piña colada meets mimosa. Who does that? I dreamed up the idea one day and thought it would be such a fun summer brunch drink!
After a quick Google search I discovered that my idea wasn’t quite as revolutionary as I thought: yes, it had been done before. But the few recipes I could find had Malibu rum, tons of sugar, canned pineapple juice, and Coco Lopez or bottled piña colada mix (read: artificial flavors, corn syrup, and preservatives!). Ugh. Sorry, but that is not what my brunch dreams are made of. I knew I could do better and keep it sort of healthy. And behold: the healthier piña colada mimosa!
These delicious cocktails are made with fresh pineapple juice, organic coconut milk, all natural coconut extract, brut champagne or prosecco, and garnished with a (naturally dyed) cherry on top!

Piña Colada Mimosas

Ingredients
- 2 bottles Brut Champagne or Prosecco chilled
- 1 1/2 cups fresh pineapple juice* room temperature
- 1 cup full fat organic coconut milk room temperature
- 1 1/2 tsp all natural coconut extract
- Pineapple wedges and naturally colored cherries for garnish
Instructions
- Chill champagne well.
- Combine pineapple juice, coconut milk, and coconut extract using blender or immersion blender. Blend just enough to get rid of any chunks in the coconut milk.
- Cover and chill for 30 minutes or until really cold.
- When ready to serve, garnish glasses, then fill each glass with 4oz champagne and 2oz of the piña colada mix (That's 2/3 champagne and 1/3 piña colada mix). When mixing, it tends to foam a lot, so make sure to pour in the piña colada mix very slowly or they will overflow!
- Serve cold and enjoy!

We loved this recipe! The taste was perfect and they were really easy to make. I picked up fresh pineapple juice from the Whole Foods juice bar and that made it even faster!

It was a great recipe, but where the heck did you get 10 minutes for prep time? Takes that long to prep the pineapple. Then you have to let some of the ingredients chill for 30 minutes. I would have given it four stars if the recipe had been more direct about that.
