Piña coladas are one of my favorite treats. It’s like ice cream and a cocktail. Best of both worlds. I’m also a sucker for frozen drinks, especially during hot summer days. Now add the beach or a pool into the mix and you’ve got a slice of paradise.
Traditional piña coladas are usually loaded with sugar, preservatives, artificial ingredients, and sometimes even dairy. The good news is that they don’t have to be. They can be healthy and just as delicious as the ones made with canned pineapple juice and Coco Lopez cream of coconut. Yes, I used to make them that way too. Oops!
This healthy piña colada recipe is made with real fruit, coconut milk, and has no added sugar. It’s not low calorie, per se, but it’s a whole lot healthier than traditional piña coladas. This is definitely a treat. I like to treat it like a dessert.
In order to pack more coconut taste into these babies, I use natural coconut extract. It is oh-so delicious and just takes the flavors to the next level of yumminess. Please don’t try to use imitation coconut extract here! The best natural coconut extract I’ve found is Flavorganics Organic Coconut Extract. It has a great flavor. And, as usual, my liquid stevia of choice is Sweet Drops.
This delicious cocktail comes together in only 3 minutes. To make it quick and easy, I recommend using a good high-powered blender (like Vitamix or Blendtec). These blenders will also give you the smoothest texture.
The recipe makes 2 small servings. I love the taste of rum, so these are pretty strong. If you prefer your cocktails a little weaker, you can always add some fresh pineapple juice or water to the mix. This recipe is also great without the alcohol as a piña colada smoothie! Yum!

Ingredients
- 2 cups frozen pineapple pieces
- 1/2 cup full fat coconut milk
- 1/2-1 tsp natural coconut extract
- 10 drops liquid stevia
- 3 oz rum
- 1 big handful of ice
Instructions
- Blend all ingredients together in a high-powered blender until smooth.
- Enjoy!

Monk fruit is another fantastic sweetener to use. I’m a diabetic and use it because it’s the only sweetener that doesn’t make me hurt.

Hi, Anne! Liquid stevia is a liquid extract of the stevia leaf that is used as a natural zero calorie sweetener.
