If you don’t feel like reading about my personal life, feel free to skip down a few paragraphs! After a long break with blogging I feel like I owe it to y’all to tell you what was up.
Truth: I made and photographed this recipe in JANUARY. January. I had every intention of picking back up with blogging a few weeks after my baby was born in December. I really didn’t foresee taking much of a break at all. Well, we had just about every recovery, breastfeeding, and sleep issue you could imagine. The first four months were unexpectedly rough. Really, up until the 6-month mark I was still feeling like the walking dead. Blogging quickly slipped from my priority list.
It was sad to see something I loved so much put on the back burner. I felt like I had lost my entire identity. Not to mention my insatiable appetite and lack of self control with food I had while breastfeeding. Holy moly. I was like a different person. Healthy eating? Well, I tried. But I was not my usual healthy self. I had lost that healthy mindset. I was only able to get back to normal and get back in that healthy mindset after I stopped breastfeeding. Funny how something touted as so healthy for your child can be so difficult for mom.
Now my sweet baby boy is 8 months old and I am back, y’all. This summer we moved out of our house in The Netherlands and spent the next 2 months traveling all over the world. It was so fun!
We just moved into our new house in Newport, RI and normal life has finally resumed. Traveling and moving has been both fun and exhausting. I think we stayed in like 10 different hotels on 3 different continents. It’s so nice to have a little normalcy for a while. Because we are moving to Japan next year! What a crazy life.
Okay, now let’s talk about these pretty juices! I’m always making quick juices in my Vitamix to get in some extra nutrients, especially when I’m not in the mood for a salad. I thought it would be fun to put together three super easy 2-ingredient juices that can be made in a snap! Aren’t those the best recipes? Quick and easy with just a couple ingredients, literally!
All three of these juices are packed with vitamins and minerals for a healthy body and mind. I find that getting enough fresh veggies and fruits makes such a difference in our moods. It’s so strange. Maybe it’s just psychological, but I just feel good after having a green juice. And I feel like it really puts me in a healthy mindset for the rest of the day.
Out of these three, the one I make the most is the Mango & Spinach Juice. It’s just so good and a great way to get in more greens! If I ever don’t feel like making/eating a side salad or other veggies with dinner, I just make a green juice! So easy. I also like these juices in the afternoon as a pick-me-up instead of having something with caffeine like coffee.
For these juices I love my Vitamix! But you can also use any high-powered blender (like Blendtec) that really blends the veggies to a smooth juice. I don’t use a juicer for these juices because, let’s be honest, juicers are a pain to clean. Plus, I like having the fiber in my juices.
For the beet in the Strawberry & Beet Juice, you can steam the beet yourself or make it easy and buy already cooked beets! That’s what I do. I find that the taste of Love Beets is really nice and they can be found in most grocery stores in the U.S.

Three 2-Minute Blender Juices

Ingredients
Mango & Spinach
- 1 cup frozen mango pieces approx. 1 mango
- 2 cups baby spinach
- 2 cups cold water
Carrot & Apple
- 2 large carrots peeled and roughly chopped
- 2 small apples I like Gala or Fuij for this
- 2 cups cold water
Strawberry & Beet
- 1.5 cups strawberries
- 1 medium-sized cooked beet quartered
- 2 cups cold water
Instructions
- For each of the juices, just throw all ingredients into a high-powered blender (like a Vitamix) and blend on high for about 1 minute.
- That's it!
- Serve as-is or over ice.

Fresh fruit juices are a great way of encouraging children to eat a greater quantity of fruit. Many children turn their noses up at fruit as they tend to prefer sweets and junk food, but by making the suggestion that they might like to make their own juices, eating healthy fruit will soon become fun rather than a chore. They can pick the fruit they like the look of and try some fun combinations of healthy juices and smoothies.
