This easy recipe is perfect for Sunday dinner and makes the juiciest pork loin every time!

Ingredients
2-3lbpork loin
1 ½Tbspfine sea salt
1 ½tspfreshly ground black pepper
4Tbspgrass-fed butterdivided
½cupchicken broth
½cupdry white wine
½cuphoney
1large yellow onionsliced
10clovesgarlicchopped
5sprigs fresh thyme
Instructions
Season pork loin. Pat roast dry and season with salt and pepper evenly on all sides.
Sear all sides. Melt 2 Tbsp butter in a large skillet over medium-high heat. Sear all sides to brown (about 10 minutes total). Remove roast to plate and deglaze pan with broth and wine. Scrape the bottom to loosen the browned bits. Turn off heat and whisk in honey.
Place in slow cooker. Place sliced onions on the bottom of the slow cooker, place pork loin on top of onions, pour sauce over the top, and top with garlic, remaining 2 Tbsp butter (cut into about 8 pieces), and thyme sprigs.
Cook. Secure the lid and set to “low” for 4-5 hours or “high” for 2-3 hours. The pork loin is done when the internal temperature reaches 140ºF (60ºC).
Rest. Carefully remove to a cutting board, tent loosely with foil, and rest for about 15 minutes. The internal temperature will continue to rise to the perfect final serving temperature of 145ºF (63ºC).
Make glaze. While the roast is resting, make the glaze by straining liquid and pouring it into a saucepan. Simmer over medium until it reduces to a glaze.
Slice and Serve. Serve with roasted baby potatoes and green beans for the perfect cozy meal!
Notes
To save time, prep the remaining ingredients while the pork loin is searing (i.e. slice onions, chop garlic, etc.)
